15 Minute Taco Rice Skillet

Mexican style rice dish highlighted with taco seasoning, cheddar cheese, ground beef, and minute rice. Seasoned with pepper and garnished with lettuce, tomato and sour cream.
Ingredients -
1 pound Ground Beef
2 cups Water
1 package Taco Seasoning
2 cups Minute Rice
1 cup Shredded Cheddar Cheese
1/4 teaspoon Pepper
coarsely crushed Tortilla Chips
Shredded Lettuce
Chopped Tomato
Sour Cream
 
Preparation:

1. Add ground beef to large skillet and brown over medium high heat.

2. Use a wooden spoon during cooking to break up the ground beef into small pieces.

3. Drain off excess fat.

4. Add water and taco seasoning to skillet. Stir to combine.

5. Bring to a boil.

6. Stir in 2 cups minute rice.

7. Sprinkle cheddar cheese over rice mixture.

8. Continue cooking 5 minutes.

9. Garnish with shredded lettuce, chopped tomato and sour cream as desired.
