Chicken And Wild Rice Soup

Nice and easy chicken soup combine sauteed celery, carrot and onion with finely chopped chicken breasts and wild rice.
Ingredients -
1 tablespoon Olive Oil
2 Carrots, chopped
2 Celery stalks, chopped
1 small Onion, chopped
Kosher Salt and Ground Pepper
16 ounces Chicken Broth
2 Boneless, Skinless Chicken Breasts, finely diced
1/3 cup Wild Rice
1-1/2 cups Water
 
Preparation:

1. Heat olive oil over medium high heat in large saucepan.

2. Add chopped carrots, celery and onion to saucepan and saute until tender.

3. Season lightly with salt and pepper.

4. Add chicken broth, chicken breasts, wild rice and water to saucepan.

5. Bring soup to a boil. Reduce to low, cover and simmer.

6. Continue to cook soup, uncovered, for 15 minutes, or until rice is tender.

7. Season with salt and pepper.

Fresh Chicken
Less than fresh chicken cannot hide its age. Look for chicken breasts that are plump and bruise free.

Chicken Freshness

Don’t be overly concerned about the differences in color of chicken breasts. Flesh should always be pinkish tan in color, but the color will vary depending on what the chicken was feeding on.
