Chile Rice Casserole

Quick and delicious Mexican style casserole prepared from rice, cream of celery soup, green chile peppers, sour cream, and shredded cheddar cheese.

Ingredients -
2 cups Uncooked Instant Rice
2 cans Cream of Celery Soup
2 (4 ounces each) cans chopped Green Chile Peppers
2 cups Sour Cream
1 cup Shredded Cheddar Cheese
 
Preparation:

1. Preheat the oven to 325 F.

2. Add uncooked rice, cream of celery soup, chopped green chili pepper, and sour cream to medium bowl. Stir with wooden spoon to combine.

3. Spread mixture evenly into ungreased 8 x 8-inch casserole dish.

4. Sprinkle cheddar cheese over rice.

5. Bake in preheated oven for 25 minutes.

Green Chili Peppers

Green chili peppers are large chili peppers, also referred to as Anaheim peppers. These peppers are mildly hot. They can be purchased fresh or packaged in cans.

Sour cream gets its tangy flavor from the bacteria culture introduced into cream during the manufacturing process. Light sour cream contains about 40% less butterfat than regular sour cream.
