1. Add extra-virgin olive oil to non-stick skillet. Heat the oil over medium high heat.
2. When the oil is hot, stir in the cooked rice, minced garlic, mixed vegetables, and diced chicken.
3. Stir fry about 3 minutes.
4. Push mixture to side and drop in egg.
5. Stir around to scramble.
6. When close to hardening stir into rice mixture and continue to stir fry for 2 minutes or until chicken is cooked through.
