Hamburger Rice Soup

Lean ground beef is browned combined with diced tomatoes, potatoes, carrots, onion, salt, white rice, fresh ground black pepper and water in stockpot. Simmered on low and served hot.

Ingredients -
1 pound Lean Ground Beef
2 (14.5 ounces each) cans diced Tomatoes
2 cups cubed Baking Potatoes
2 Carrots, peeled and chopped
1 White or Yellow Onion, chopped
4 teaspoons Coarse Salt
1/4 cup Uncooked White Rice
1/8 teaspoon Fresh Ground Black Pepper
6 cups Water
 
Preparation:

1. Add lean ground beef to skillet and brown over medium heat. Break up meat with wooden spoon as it browns.

2. Drain off excess fat.

3. Stir in the diced tomatoes with liquid, cubed potatoes, chopped carrots, chopped onion, salt, uncooked rice, fresh ground black pepper and water.

4. Bring to a boil and reduce heat to low.

5. Simmer 30-40 minutes.

 



Cooking Tip
Lean Ground Beef

A very lean ground beef will render less fat when cooked leaving more beef. The fat is what provides much of the flavor of ground beef and removing most of it leaves meat with little flavor, which is ok in the case of this soup recipe where the beef is not the showcase.

Uncooked White Rice

White rice is the most common type of rice. White rice tends to be more delicate and fluffy than other types, as the tough outer husk has been removed and the bran layers milled down, leaving the white part of the grain.
