Indian Vegetable Rice

Basmati rice cooked with sautéed onion, cumin, water, sea salt, garam masala, and frozen mixed vegetables.

Ingredients -
2 tablespoons Vegetable Oil
1 White or Yellow Onion, thinly sliced
1/2 teaspoon Ground Cumin
1 cup Basmati Rice
2 cups Cold Water
3/4 teaspoon Kosher Salt
1/2 teaspoon Garam Masala
3/4 cup Frozen Mixed Vegetables
 
Preparation:

1. In large pan heat oil over medium heat and saute onions and cumin until onions are tender, but not browned.

2. Rinse the rice several times and drain well.

3. Add the rice to the pan with the onions and pour in the 2 cups of water.

4. Stir in the sea salt, garam masala and vegetables.

5. Cover the pan and increase the heat to high.

6. Bring the mixture to a boil and then reduce the heat to low, keeping the rice covered at all times.

7. After cooking for about 10 minutes, gently stir the rice to distribute the spices evenly.

8. Cook 25 to 30 minutes, or until all of the water has evaporated and the rice is tender.

Basmati Rice

A variety of long grain rice grown in India and Pakistan, basmati is known for its delicate texture and fragrant aroma. Bamati is available in white and brown varieties and can be found in many supermarkets and specialty stores. Cooked basmati rice is not sticky, just slightly moist like most long grain rice.

Garam Masala

Garam masala is a blend of spices, sometimes just a few spices, sometimes upwards of two dozen. No on spice blend is considered more authentic than another. Most of these blends are roasted to enhance the individual flavors of each spice.
