Mexican Skillet Rice

Mexican style rice skillet featuring ground meat with onion, pinto beans, fresh tomato, chili peppers, chili powder, and cilantro. A meal in itself, or a great side dish.
Ingredients -
3/4 pound Lean Ground Pork or Lean Ground Beef
1 medium Onion, chopped
1-1/2 tablespoons Chili Powder
1 teaspoon Ground Cumin
1/2 teaspoon Salt
3 cups cooked Brown Rice
1 (16 ounces) can Pinto Beans, drained
2 (4 ounces each) cans diced Green Chiles
1 medium Fresh Tomato, seeded and chopped (optional)
Fresh Cilantro Sprig, for garnish
 
Preparation:

1. Add lean meat to large skillet. Brown over medium high heat. Use wooden spoon to crumble meat into tiny pieces.

2. Drain off all excess fat.

3. Add onion, chili powder, cumin and salt to skillet. Continue cooking until onion is tender.

4. Stir in brown rice, pinto beans, and green chilies. Heat through.

5. Top with chopped fresh tomato, garnish with cilantro and serve.

Cutting Mushrooms
Some recipes will call for removing the stems. Save the stems for stews, stocks, and sauces.

Dried Mushrooms
Many mushroom varieties are available in dried form. Bringing them back to their original state by soaking them in water is relatively easily. The soaking liquid is great for using in soups, stocks and sauces.
