Monterrey Jack Rice

Quick and easy Mexican style casserole prepared from sour cream, cooked white rice and diced green chilies topped with shredded Monterrey Jack cheese.

Ingredients -
2 cups Sour Cream
3/4 cup Prepared White Rice
1 (2 ounces) can diced Green Chilies (optional)
1 cup Shredded Monterey Jack Cheese
 
Preparation:

1. Preheat oven to 350 F.

2. Add sour cream, cooked white rice and diced green chilies to mixing bowl.

3. Spread ½ rice mixture into ungreased 1-1/2 quart casserole dish. Top with ½ cup cheese.

4. Repeat layers.

5. Bake in preheated oven for 15 minutes or until golden.

 



Cooking Tip
Sour Cream

Light sour cream can be used in this recipe in place of the regular sour cream to reduce calories. The light version of sour cream has about 40% less butterfat than regular sour cream.

White rice can be prepared in about 15 to 20 minutes depending on the brand and method of cooking.
