Pork and Vegetable Fried Rice

Easy skillet preparation of stir-fried rice dish featuring pork, vegetables, water chestnuts, light soy sauce, Hoisin sauce, and egg. Rice is seasoned with sesame oil and garnished with chopped scallions.

Ingredients -
1/2 tablespoon Vegetable Oil
2 Large Eggs, lightly beaten
1 (5.2 ounces) box Asian-Style Rice Mix
1 pound Pork Roast, cut into 3/4 inch cubes
1 (16 ounces) bag Frozen Asian Stir Fry Vegetables, thawed
1 (8 ounces) can Sliced Water Chestnuts
2 tablespoons Light Soy Sauce
1 tablespoon Hoisin Sauce
2 teaspoons Sesame Oil
2 Scallions, chopped
 
Preparation:

1. Add 1/2 tablespoon vegetable oil to skillet. Heat the oil over medium heat.

2. Pour in lightly beaten eggs. Cook until set and remove to a plate. Cut into strips.

3. Wipe skillet clean. Prepare rice mix in skillet according to package directions.

4. During last 7 minutes of cooking, stir in cubed pork, stir-fry vegetables, sliced water chestnuts, light soy sauce, Hoisin sauce and egg strips.

5. Cook, covered for remaining cooking time.

6. Remove from heat and stir in sesame oil. Let stand covered 5 minutes before serving.

7. Garnish rice dish with chopped scallions.

 



Cooking Tip
Stir-Fried Rice

When preparing stir-fried rice from scratch, prepare Chinese long grain white rice per the package directions and once the rice has cooled a few minutes, place in the refrigerator, covered, overnight. Remove the rice 10 minutes or so before preparing stir-fried rice to allow the rice to come up to room temperature.
