Rice Con Queso

Casserole prepared from cooked rice, drained and rinsed black beans, chopped green chilies, red bell pepper, unflavored non-fat yogurt, ground cumin, crushed oregano, and low-fat cheddar cheese.

Ingredients -
2 cups Hot Cooked Rice
3/4 cup canned Black Beans, drained and rinsed
2 (3 ounces each) cans chopped Green Chiles
1/2 Red Bell Pepper, diced
1-1/2 cups Unflavored Non-Fat Yogurt
2 teaspoons Ground Cumin
1/2 teaspoon Crushed Oregano
1 cup Shredded Low-Fat Cheddar Cheese
 
Preparation:

1. Preheat oven to 350 F.

2. Add hot cooked rice, drained and rinsed black beans, chopped green chilies, red bell pepper, unflavored non-fat yogurt, ground cumin, crushed oregano, and low-fat cheddar cheese to medium mixing bowl.

3. Stir to combine with wooden spoon.

4. Grease 1-1/2 quart casserole dish with film of butter.

5. Bake casserole, uncovered, in preheated oven for 45 minutes.
