Shrimp Fried Rice

Chinese white rice stir-fried with garlic, green onion, egg, soy sauce, and shrimp.

Ingredients -
8 ounces Shrimp, peeled, deveined, tails removed
2 Garlic Cloves, thinly sliced
4 Green Onions, sliced
3 Large Eggs, beaten
4 cups Long Grain Chinese White Rice, cooked and chilled overnight
2 tablespoons Olive Oil, divided
2 tablespoons Soy Sauce
 
Preparation:

1. Add 1 tablespoon olive oil to large skillet or wok.

2. Sauté the thinly sliced garlic until brown over medium-high heat. Discard garlic.

3. Add shrimp to hot oil. Stir-fry 2 to 3 minutes. Remove shrimp to bowl. Set aside.

4. Add remaining tablespoon of olive oil to hot wok and scramble eggs. Remove eggs to bowl. Set aside.

5. Add cooked rice to wok and stir fry until hot and dry.

6. Add soy sauce and stir until rice is even brown in color.

7. Return shrimp and eggs to wok and stir fry 2 minutes.

8. Add green onions and stir fry another 2 to 3 minutes.

 



Cooking Tip
Chinese White Rice

Chinese white rice can be found in most supermarkets and is usually packaged in paper containers. For best results when cooking Chinese white rice, use a heavy bottomed saucepan, and do not add salt or butter. Depending on the brand and package directions, you may find rinsing the rice several times will yield less sticky finished rice. For stir-fried rice, use rice that has been prepared the day before and refrigerated overnight.
