Rice Pilaf With Toasted Almonds
Ingredients -
1 tablespoon Butter
1 small minced Onion
1/4 teaspoon Ground Coriander
Coarse Salt and Fresh Ground Black Pepper, to taste
1 cup Long-Grain Rice
1 can (14.5 ounces) Reduced-Sodium Chicken Broth
2 tablespoons chopped Fresh Parsley
1/4 cup Toasted Sliced Almonds
Preparation:
1. Add butter to large saucepan. Melt butter over medium heat.

2. Add onion to saucepan, and sauté until golden brown. Stir occasionally.

3. Add coriander, salt and pepper.

4. Stir in long grain wild rice. Cook 2 minutes.

5. Stir in reduced-sodium chicken broth.

6. Bring to a boil.

7. Cover, reduce heat to low, and simmer approximately 15 minutes, or until liquid is absorbed.

8. Remove from heat and let stand, covered, for 10 minutes.

9. Stir in parsley. Garnish with almonds.

10. Serve hot.
